My son lives with me and my daughter’s family lives next to me, so we’ve been spending a lot of time together:) I know some people wouldn’t like that, but I love it!!! Our schools are closed for the rest of the year? The other day, I made my famous (lol) chicken cheese soup—my grandkid’s very favorite!!! Hope everyone stays well!! We’ve had to hunger down because my mother is on hospice and lives with us. She cannot afford to get this virus.

This week we are also trying to eat some of the food in the pantry and freezer. Had some frozen perch in the freezer that my husband cooked up in some shore lunch batter .. it was delicious. I made a slow cooker pork shoulder with chimchurri sauce. So good. Had it for lunch the next day as tacos and also added some diced sautéed sweet potatoes my son cooked up. Also a really simple easy orzo Pasta with Parmesan and basil

My husband & I are both teachers. With the school buildings closed, we are teaching remotely now, but we are using this extra time to eat down the pantry & freezer so that we can put away this spring & summer’s crop of backyard veggies! I had a store of bread flour that was getting older, so I have been baking a lot of homemade bread & rolls. We have lots of homemade frozen tomato sauce from last year’s garden, so we are also finding lots of ways to use that up! (Instant Pot spaghetti & lasagna have been favorites.)

That is so special that you’re eating down the pantry/freezer and that you are using the spring/summers crop. That’s just so so incredible you grow and can your own vegetables like that! Also, thank you for all you’re doing teaching remotely.

We are quarantined to home, my husband would be a high risk if he got the virus. I’ve started a new sourdough starter and have made a traditional French bread while I’m feeding the starter. Luckily I’m well stocked with food and canned goods. Love to see the kids getting bigger! Stay safe!

These are tough times, I’ve been in the kitchen quite a bit. My sourdough starter has been doing its due diligence, we’ve made bread, soft pretzels and plenty of pizza dough! Dessert has also made the house smell excellent!

My family is doing well. My husband is working from home now but my cleaning business isn’t fairing too well. For obvious reasons, I won’t be needed for a while. We just found out that that our school cancellation was extended through May 1. (We live in Indiana) I’m kind of in shock. This is my son’s senior year, so this is very sad. I already did a lot of cooking at home (probably six days a week) so it hasn’t been a huge adjustment. But with all the lunches added in now, I feel like all I do is cook, clean up and start all over again for the next meal! This week I plan on making chili, tacos, loaded baked potato soup and meatball sliders. I pray your family stays healthy!

Thank you for sharing that Amy. It’s so hard right now, so unsteady and unsure what’s happening next…or for how long. I am so sorry to hear that about your cleaning business. Thank you again for sharing and for being part of the Sweetphi community!! I pray for your family and health as well.

I have been cooking lots of stews, soups and recipes using winter greens from my garden plus canned tomatoes and beans. Last night I used kale and collards with ground turkey, canned fire roasted tomatoes, canelli beans, onions, garlic, lots of spices and herbs. I’m lucky that my family loves hot and spices things.

That’s so neat you have all those winter greens in your garden (This week I’m coming out with a kale and sausage pizza recipe that I’d recommend!) and your family is so lucky to have you cooking such wonderful things.

There’s nothing I enjoy more than a cold, delicious iced coffee from Starbucks. But sometimes I don’t have the time (or, let’s be real, the 💰) to pick one of these bad boys up in the mornings, so I was determined to figure out how to make Starbucks iced coffee at home, which is exactly what I did with this french press iced coffee!⠀⠀⠀⠀⠀⠀⠀⠀⠀
